Description

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 bunch asparagus (trimmed)

  • 1 tablespoon olive oil (or butter)

  • 1 cup shredded mozzarella cheese (or cheese of choice)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Salt and pepper to taste

  • Fresh parsley (for garnish, optional)

Instructions

  • Preheat the Oven:
    Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

  • Prepare the Chicken:
    Use a sharp knife to create a pocket in each chicken breast by slicing horizontally through the thickest part, but not all the way through.

  • Stuff the Chicken:
    Season the chicken breasts inside and out with garlic powder, onion powder, salt, and pepper. Stuff each chicken breast with 3-4 spears of asparagus and a generous portion of shredded mozzarella cheese.

  • Sear the Chicken:
    Heat olive oil (or butter) in a large oven-safe skillet over medium-high heat. Sear each chicken breast for about 2-3 minutes on each side until golden brown.

  • Bake:
    Transfer the skillet to the preheated oven and bake the chicken for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

  • Serve:
    Remove the chicken from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley, if desired.
