Ingredients

  • 2 chicken breasts, boneless and skinless

  • 8 oz pasta (penne or spaghetti)
  • 1/4 cup fresh basil, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 1/2 cup shredded mozzarella cheese (optional)

  • Freshly grated Parmesan cheese, for topping


Instructions

  • Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions. Drain and set aside.

  • Prepare the chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.

  • Make the bruschetta topping: In the same skillet, add garlic and cook for 1 minute. Add the halved tomatoes and cook for 2-3 minutes until they soften. Stir in balsamic vinegar and basil. Season with salt and pepper to taste.

  • Combine: Slice the chicken into strips or bite-sized pieces. Add the cooked pasta and chicken into the skillet with the tomato mixture. Toss to combine and heat through.

  • Serve: Top with mozzarella cheese (if using) and a sprinkle of Parmesan. Garnish with extra basil for freshness.
