Ingredients

For the steak bites:

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes

  • 3 tbsp unsalted butter

  • 3 cloves garlic, minced

  • Salt and freshly ground black pepper, to taste

  • 1 tbsp olive oil

  • Fresh parsley, chopped (for garnish)

For the garlic herb potatoes:

  • 1 lb baby potatoes, halved or quartered

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried rosemary or thyme

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Potatoes:
    Preheat oven to 425°F (220°C). Toss potatoes with olive oil, garlic, rosemary or thyme, salt, and pepper. Spread evenly on a baking sheet. Roast 25-30 minutes, flipping halfway, until golden and crispy.

  • Cook the Steak Bites:
    While potatoes roast, heat olive oil in a large skillet over medium-high heat. Season steak cubes with salt and pepper. Add steak to skillet in a single layer (cook in batches if necessary). Sear 2-3 minutes per side until browned and cooked to your liking.

  • Add Butter and Garlic:
    During the last minute of cooking, add butter and minced garlic to the pan. Spoon melted butter over steak bites for extra flavor. Remove from heat and garnish with parsley.

  • Serve:
    Plate steak bites with garlic herb potatoes. Garnish potatoes with parsley and serve immediately.
