Description

Chilaquiles Breakfast Casserole is a savory baked dish layering crispy tortilla chips with eggs, salsa, cheese, and optional meats or beans. This easy, make-ahead casserole brings bold Mexican flavors to your morning table, perfect for family breakfasts and brunch gatherings.


Ingredients

  • Tortilla chips (corn)
  • Eggs

  • Salsa (red or green)

  • Shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Milk or cream

  • Black beans (optional)

  • Green onions (sliced)

  • Fresh cilantro (chopped)

  • Sour cream or crema (for serving)

  • Avocado slices (for garnish)


Instructions

  • Preheat oven: Set to 350°F (175°C).

  • Layer chips: Spread half the tortilla chips evenly in a greased baking dish.

  • Add salsa and toppings: Pour half the salsa over chips, add  beans if using, then sprinkle half the cheese.

  • Mix eggs: Whisk eggs with milk or cream, season with salt and pepper.

  • Assemble casserole: Pour half the egg mixture over layers. Repeat layers with remaining chips, salsa, cheese, and eggs.

  • Bake: Cover with foil, bake 25-30 minutes. Remove foil and bake 10 more minutes until eggs are set and cheese bubbles.

  • Garnish and serve: Top with green onions, cilantro, sour cream, and avocado slices.
