Description

Ingredients

  • 1 1/2 cups plain or vanilla Greek yogurt (or regular yogurt)

  • 1 teaspoon vanilla extract

  • 1 cup fresh strawberries, hulled and sliced into small pieces

  • 1 cup semi-sweet chocolate chips (or dark chocolate for a richer flavor)

  • 1 tablespoon coconut oil or vegetable oil (to help the chocolate melt smoothly)

Instructions

  • Prepare the strawberries: Wash and hull the strawberries, then slice them into small pieces or quarters.

  • Mix the yogurt filling: In a medium bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth. Taste the mixture and adjust sweetness as desired.

  • Prepare the mold or baking sheet: Line a baking sheet with parchment paper or use a silicone mold. For a baking sheet, place a cooling rack on top for better shape retention.

  • Assemble the yogurt bites: Spoon small dollops of yogurt mixture onto the tray or mold. Press a piece of strawberry into the center of each yogurt dollop.

  • Freeze the yogurt bites: Freeze for at least 2-3 hours until the yogurt is firm and completely frozen.

  • Coat in chocolate: Melt chocolate chips and coconut oil in the microwave in 30-second intervals. Stir until smooth.

  • Dip in chocolate: Using a fork, dip each frozen yogurt bite into the chocolate, shaking off excess, and placing it back on the tray.
