Ingredients

  • Cod fillets

  • Coconut milk (full-fat)

  • Red curry paste or curry powder

  • Garlic (minced)

  • Ginger (freshly grated)

  • Onion (chopped)

  • Lime juice

  • Olive oil or coconut oil

  • Salt and pepper

  • Fresh cilantro or parsley (for garnish)

  • Optional: diced tomatoes or bell peppers

Instructions

  1. Preheat oven to 375°F (190°C). Lightly oil a baking dish.

  2. In a skillet, heat oil over medium heat. Sauté onion, garlic, and ginger until fragrant.

  3. Stir in curry paste or powder. Add coconut milk and simmer until slightly thickened.
