6 cups cornflakes cereal

1 cup unsalted butter (2 sticks)

1 cup granulated sugar

1 cup light corn syrup

1/2 tsp baking soda

Instructions

Prepare Pan:
Line a 9×13-inch baking dish with parchment paper or lightly grease it. -
Cook Toffee Mixture:
In a large saucepan over medium heat, melt butter. Stir in sugar and corn syrup.
Bring to a boil, stirring constantly.
Once boiling, cook without stirring for 4–5 minutes or until the mixture turns light amber. -
Finish Toffee:
Remove from heat. Quickly stir in baking soda and vanilla extract. The mixture will foam up. -
Coat Cornflakes:
Immediately pour toffee over cornflakes in a large bowl.
Gently toss to coat all cornflakes evenly. -
Set and Cool:
Transfer mixture to prepared pan and press down gently to spread evenly.
Let cool completely at room temperature until firm. -
Break and Serve:
Once set, break into pieces or bars. Store in an airtight container.
