Ingredients

  • 1 cup cottage cheese (blended until smooth)

  • 2 large eggs (room temperature)

  • 1/2 cup protein powder (chocolate or vanilla)

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup coconut oil (melted)

  • 1/4 cup coconut flour

  • Sweetener to taste (such as monk fruit or erythritol)

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/2 cup dark chocolate (chopped) or sugar-free chocolate chips

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (180°C). Line a 9×9-inch baking pan with parchment paper.

  • Blend Cottage Cheese: Blend the cottage cheese in a food processor or blender until smooth and creamy.

  • Combine Wet Ingredients: Add the eggs, melted coconut oil, and vanilla extract to the blended cottage cheese. Blend until fully combined.

  • Mix Dry Ingredients: In a separate bowl, combine the protein powder, cocoa powder, coconut flour, sweetener, and baking powder.

  • Combine All Ingredients: Add the dry ingredients to the wet ingredients and blend until smooth.

  • Add Chocolate: Pour the batter into the prepared pan and top with chopped dark chocolate or sugar-free chocolate chips.

  • Bake: Bake for 20-22 minutes, until the top is set and a toothpick inserted comes out with a few moist crumbs.
