Prepare the Crust:
Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then let cool slightly. -
Make the Filling:
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in sour cream, Amaretto, vanilla, and almond extract until fully combined. -
Bake the Cheesecake:
Pour filling into the crust. Bake for 50–60 minutes, or until edges are set and center is slightly jiggly. Turn off oven, crack the door, and cool for 1 hour. Then refrigerate for at least 4 hours or overnight. -
