Description

Crockpot Swedish Meatballs are tender, flavorful meatballs simmered in a creamy, savory gravy made with sour cream and beef broth. This easy slow-cooker recipe creates a comforting, hands-off meal perfect for busy days and satisfying family dinners.


Ingredients

  • 1 lb ground beef

  • ½ cup breadcrumbs

  • 1 large egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon mustard

  • ½ cup sour cream

  • 2 tbsp all-purpose flour or cornstarch (for thickening)

  • 1 tbsp butter or oil (for browning)

Instructions

  • In a bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix gently and form into small meatballs.

  • Heat butter or oil in a skillet over medium heat. Brown meatballs on all sides (they do not need to be fully cooked).

  • Transfer browned meatballs to the slow cooker.

  • In the same skillet, whisk together beef broth, Worcestershire sauce, and Dijon mustard. Pour the mixture over the meatballs.

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours.

  • About 30 minutes before serving, stir sour cream into the slow cooker.

  • Mix flour or cornstarch with a little water to make a slurry, then stir into the slow cooker to thicken the gravy as needed.

  • Cook uncovered for the remaining time, stirring gently.

  • Serve meatballs and gravy over egg noodles, mashed potatoes, or rice.
