Description

Cucumber Tomato Salad is a fresh and vibrant dish with crisp cucumbers and juicy tomatoes tossed in a light, tangy dressing. This easy and healthy salad is perfect as a refreshing side for summer meals, barbecues, or everyday dinners.


Ingredients

  • 2 large cucumbers, sliced

  • 3-4 ripe tomatoes, chopped

  • ½ red onion, thinly sliced

  • ¼ cup fresh basil or parsley, chopped

  • 3 tablespoons olive oil

  • 2 tablespoons red wine vinegar or lemon juice

  • 1 teaspoon sugar or honey (optional)

  • Salt and freshly ground black pepper, to taste

  • Optional: crumbled feta cheese or sliced olives

Instructions

  • Prepare Vegetables: Slice cucumbers and chop tomatoes into bite-sized pieces. Thinly slice red onion.

  • Make Dressing: In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), sugar (if using), salt, and pepper.

  • Combine Salad: In a large bowl, toss cucumbers, tomatoes, onion, and herbs.

  • Add Dressing: Pour dressing over salad and toss gently to coat.

  • Chill: Refrigerate for at least 15 minutes to let flavors meld (optional).

  • Serve: Optionally, sprinkle with feta cheese or olives before serving.


Notes
