Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 package (8 oz) cream cheese, softened

  • 1 cup chicken broth

  • 1 teaspoon dried thyme (or other dried herbs like rosemary or oregano)

  • 1 tablespoon Dijon mustard (optional, for extra flavor)

  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Prepare the Chicken:
    Season the chicken breasts on both sides with garlic powder, onion powder, salt, and pepper.

  • Sear the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.

  • Make the Cream Cheese Sauce:
    In the same skillet, add the softened cream cheese, chicken broth, dried thyme, and Dijon mustard (if using). Stir constantly until the cream cheese is melted and the sauce is smooth and creamy. Scrape up any bits from the bottom of the skillet as you stir.

  • Return the Chicken to the Skillet:
    Once the sauce is creamy and well-combined, return the chicken to the skillet. Spoon the sauce over the chicken, then cover and simmer on low heat for about 5 minutes, allowing the chicken to absorb some of the creamy sauce.
