Description

Fiery Cajun Shrimp Stuffed Jalapeños are spicy, creamy appetizers filled with zesty Cajun-seasoned shrimp, cream cheese, and cheddar. Baked until golden and bubbly, they’re perfect for parties, game day, or anytime you crave a flavorful low-carb, gluten-free snack.


Ingredients

  • 12 large jalapeño peppers

  • 1/2 pound shrimp, peeled, deveined, and chopped

  • 1 tablespoon Cajun seasoning

  • 2 tablespoons olive oil

  • 8 oz cream cheese, softened

  • 1 cup shredded sharp cheddar cheese

  • 2 cloves garlic, minced

  • 2 green onions, sliced

  • Salt and freshly ground black pepper, to taste

  • Optional garnish: chopped fresh cilantro or parsley

Instructions

  • Prepare Jalapeños: Preheat oven to 375°F (190°C). Slice jalapeños in half lengthwise and remove seeds and membranes (wear gloves). Arrange cut-side up on a parchment-lined baking sheet.

  • Cook Shrimp: Heat olive oil in a skillet over medium heat. Sauté garlic for 1 minute. Add shrimp and Cajun seasoning; cook until opaque, 3-4 minutes. Remove from heat.

  • Make Filling: Combine shrimp, cream cheese, cheddar, and green onions in a bowl. Season with salt and pepper.

  • Stuff Jalapeños: Spoon filling into each jalapeño half evenly.

  • Bake: Bake for 15-20 minutes until jalapeños are tender and filling is bubbly and golden.

  • Serve: Garnish with cilantro or parsley if desired. Serve warm.
