Description

Fritos Corn Salad is a crunchy, creamy, and flavorful side dish that combines fresh corn, shredded cheddar, crunchy Fritos chips, and a tangy, zesty dressing. Ingredients

  • 4 cups fresh or frozen corn (thawed if frozen)

  • 1 cup shredded cheddar cheese

  • 1 cup chopped red bell pepper

  • 1/2 cup chopped green onions

  • 1 cup Fritos corn chips, slightly crushed

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream

  • 1 tablespoon lime juice

  • 1 teaspoon chili powder

  • Salt and pepper, to taste

  • Optional: 1/2 cup black beans, rinsed and drained

  • Optional: 1 jalapeño, seeded and finely chopped

Instructions

  • Mix the Dressing: Combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl; stir until smooth.

  • Combine Salad Ingredients: In a large bowl, mix corn, cheddar cheese, red bell pepper, green onions, and optional black beans or jalapeño.

  • Add Dressing: Pour dressing over salad ingredients and toss gently to coat evenly.

  • Add Fritos: Fold in crushed Fritos just before serving to keep them crunchy.

  • Serve: Serve immediately or chill for 30 minutes (add Fritos just before serving).
