Description

Funeral Potatoes are a creamy, cheesy, and comforting casserole made with shredded potatoes, sour cream, cheese, and a crispy, buttery topping. This classic side dish is perfect for family gatherings, potlucks, or any occasion where you want hearty, crowd-pleasing comfort food.


Ingredients

  • 1 (32 oz) bag frozen shredded hash browns, thawed

  • 1 can (10.5 oz) cream of chicken soup (or cream of mushroom for vegetarian)

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese

  • 1/2 cup diced onions

  • 1/4 cup butter, melted

  • 2 cups crushed cornflakes or crushed Ritz crackers (for topping)

  • Salt and pepper, to taste

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • In a large bowl, combine hash browns, cream of chicken soup, sour cream, shredded cheese, and diced onions. Season with salt and pepper. Mix well.

  • Spread mixture evenly in the prepared baking dish.

  • In a separate bowl, mix melted butter with crushed cornflakes or crackers. Sprinkle evenly over the casserole.

  • Bake for 45-55 minutes, until top is golden brown and casserole is bubbly.
