Green Beans Almondine is a classic French side dish featuring tender green beans, a buttery sauce, toasted almonds, and a refreshing squeeze of lemon. Simple yet elegant, this dish is perfect for holiday dinners, weeknight meals, or any occasion that calls for a flavorful, fresh vegetable side.
Ingredients

1 pound fresh green beans, trimmed 
- 
2 tablespoons butter 
- 
1/4 cup sliced almonds 
- 
1 teaspoon lemon juice 
- 
Salt and pepper, to taste

1 teaspoon lemon zest (optional, for extra brightness) 
- Fresh parsley, chopped (optional, for garnish)
Instructions
- 
Blanch the Green Beans: Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain again and set aside.

Toast the Almonds: In a large skillet, melt butter over medium heat. Add sliced almonds and cook, stirring constantly, until golden brown and fragrant, about 2-3 minutes. Be careful not to burn them.

Cook the Green Beans: Add blanched green beans to the skillet with the almonds. Toss to coat in butter and almonds, cooking for 2-3 minutes until heated through.

Add Lemon: Stir in lemon juice and zest (if using). Season with salt and pepper to taste.

Serve: Transfer green beans almondine to a platter and garnish with fresh parsley, if desired.
