Instructions

  • Prepare the Peaches:

    • Peel, pit, and chop the peaches into small pieces. Place them in a medium-sized bowl, sprinkle with 2 tablespoons of sugar, and add the lemon juice. Stir to coat the peaches, and let them sit for about 15-20 minutes to release their juices.

  • Mash the Peaches:

    • After the peaches have softened, mash them with a fork or potato masher to create a chunky puree. You can leave some pieces intact for texture.

  • Make the Ice Cream Base:

    • In a large mixing bowl, whisk together the heavy cream, whole milk, 1/2 cup of sugar, vanilla extract, and salt until the sugar is dissolved.

  • Combine with the Peaches:

    • Add the mashed peaches and their juices to the cream mixture. Stir to combine, making sure the peach mixture is evenly distributed throughout the cream base.

  • Freeze the Ice Cream:

    • Pour the mixture into a freezer-safe container. Cover it with plastic wrap or a tight-fitting lid and freeze for at least 4-6 hours or until firm.
