Description

Jalapeno Peach Chicken is a vibrant, flavorful dish that perfectly balances sweet peaches with spicy jalapenos. Tender chicken breasts simmered in a tangy, slightly sweet sauce create an easy and healthy meal ideal for weeknights or entertaining. Ready in under 30 minutes, this dish pairs beautifully with rice, quinoa, or fresh salads.

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 1 cup fresh or canned peach slices (drained if canned)

  • 1–2 jalapenos, seeded and finely chopped (adjust to heat preference)

  • 2 cloves garlic, minced

  • 1 small red onion, thinly sliced

  • ½ cup chicken broth

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon lime juice

  • Fresh cilantro, chopped (for garnish)

Instructions

  • Prepare the Chicken: Season chicken breasts with salt and pepper.

  • Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken breasts for 4–5 minutes per side until golden brown. Remove and set aside.

  • Cook Vegetables and Peaches: In the same skillet, sauté onion, garlic, and jalapenos for 2–3 minutes until softened.

  • Add Sauce Ingredients: Stir in peaches, chicken broth, honey, and lime juice. Bring to a simmer.

  • Combine and Simmer: Return chicken to skillet, spoon sauce over the top, cover, and simmer on low for 10–12 minutes, until chicken is cooked through and sauce thickens slightly.

  • Garnish and Serve: Sprinkle with fresh cilantro and serve warm over rice, quinoa, or alongside your favorite side.

Notes

Adjust jalapeno amount for preferred spice level.Use fresh peaches in season for best flavor or canned/frozen as alternatives. For a grilled variation, marinate chicken with peaches and jalapenos then grill.Add soy sauce or balsamic vinegar for a richer sauce flavor.Substitute chicken thighs for extra juiciness or use tofu/mushrooms for vegetarian options
