Description

Keto French Onion Meatloaf is a savory, low-carb take on the classic meatloaf inspired by rich French onion soup flavors. Featuring caramelized onions, ground beef, and melted Swiss or Gruyère cheese, this comforting keto-friendly dish is perfect for meal prep or cozy dinners without the carbs.


Ingredients

  • Ground beef (80/20 blend recommended)

  • Yellow onion (thinly sliced)

  • Garlic (minced)

  • Eggs

  • Almond flour (low-carb binder)

  • Beef broth or low-carb French onion soup broth

  • Worcestershire sauce

  • Dijon mustard

  • Salt and pepper

  • Shredded Swiss or Gruyère cheese

  • Butter or olive oil (for caramelizing onions)

  • Fresh or dried thyme (optional)

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Heat butter or oil in a skillet over medium heat. Add onions and cook slowly, stirring occasionally, until caramelized (20-25 minutes). Add garlic last few minutes, then remove from heat and cool slightly.

  3. In a large bowl, combine ground beef, eggs, almond flour, caramelized onions (reserve a few tablespoons for topping), broth, Worcestershire sauce, Dijon mustard, salt, pepper, and thyme. Mix gently until just combined.

  4. Shape mixture into a loaf and place in greased loaf pan or parchment-lined baking sheet.

  5. Spread reserved caramelized onions on top, then sprinkle shredded cheese evenly over onions.

  6. Bake 50-60 minutes until internal temperature reaches 160°F (71°C).
