Description

These Lemon Brownies with Lemon Glaze are a delightful treat that combines the rich, cake-like texture of brownies with a zesty, citrus kick from fresh lemon juice and zest. Topped with a smooth and tangy lemon glaze, these brownies are perfect for any occasion.

Ingredients

  • For the Brownies:

    • 1 box (15.25 oz) yellow cake mix (Betty Crocker recommended)

    • 1 box lemon instant pudding

    • 1/3 cup lemon juice

    • 2 large eggs

    • 1 teaspoon lemon zest

  • For the Glaze:

    • 1 cup powdered sugar

    • 1 tablespoon lemon juice (add extra for desired consistency)

  • Lemon zest for garnish (optional)

Instructions

  • Prepare the Pan
Line an 8-inch square baking dish with parchment paper and lightly grease with cooking spray.

  • Mix the Brownie Batter
In a medium-sized bowl, combine the cake mix, lemon pudding mix, lemon juice, eggs, and lemon zest. Use a hand mixer to blend the ingredients until smooth.

  • Bake
Pour the batter into the prepared pan, spreading it evenly. Bake at 350°F (175°C) for 22-24 minutes, or until a toothpick comes out clean.

  • Cool
Let the brownies cool in the pan for 10 minutes. Lift them out using the parchment paper and let them cool completely.

  • Make the Glaze
In a small bowl, whisk together powdered sugar and lemon juice until smooth. If the glaze is too thick, add a few more drops of lemon juice to reach the desired consistency.

  • Glaze and Serve
Drizzle the glaze over the cooled brownies and garnish with additional lemon zest, if desired. Slice into squares and enjoy!

Notes

Frosting Option: Skip the glaze and top with cream cheese frosting for a richer, creamy option.Add-Ins: Mix in white chocolate chips or poppy seeds for added texture and flavor.Lime Variation: Substitute lime juice and zest for lemon for a different citrus twist.
