Ingredients
-
For the Brownies:
-
1 box (15.25 oz) yellow cake mix (Betty Crocker recommended)
-
1 box lemon instant pudding
-
1/3 cup lemon juice
-
2 large eggs
-
1 teaspoon lemon zest
-
-
For the Glaze:
-
1 cup powdered sugar
-
1 tablespoon lemon juice (add extra for desired consistency)
-
- Lemon zest for garnish (optional)
Instructions
-
Prepare the Pan
Line an 8-inch square baking dish with parchment paper and lightly grease with cooking spray. -
Mix the Brownie Batter
In a medium-sized bowl, combine the cake mix, lemon pudding mix, lemon juice, eggs, and lemon zest. Use a hand mixer to blend the ingredients until smooth. -
Bake
Pour the batter into the prepared pan, spreading it evenly. Bake at 350°F (175°C) for 22-24 minutes, or until a toothpick comes out clean. -
Cool
Let the brownies cool in the pan for 10 minutes. Lift them out using the parchment paper and let them cool completely. -
Make the Glaze
In a small bowl, whisk together powdered sugar and lemon juice until smooth. If the glaze is too thick, add a few more drops of lemon juice to reach the desired consistency. -
Glaze and Serve
Drizzle the glaze over the cooled brownies and garnish with additional lemon zest, if desired. Slice into squares and enjoy!
