Ingredients

1 pound boneless, skinless chicken breasts, cubed

2 teaspoons lemon pepper seasoning

2½ cups chicken broth 
- 
1 cup uncooked white rice 
- 
3 tablespoons lemon juice 
- 
3 tablespoons melted butter 
- 
1 tablespoon lemon zest 
- 
1 tablespoon minced garlic 
- 
1 teaspoon onion powder 
- 
1 teaspoon dried basil 
- 
½ teaspoon ground black pepper 
- 
½ teaspoon dried thyme 
- Thin slices from 1 lemon
Instructions
- 
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish. 
- 
Mix chicken broth, rice, lemon juice, butter, lemon zest, garlic, onion powder, basil, pepper, thyme, and salt directly in the dish.

Season cubed chicken with lemon pepper and arrange evenly on top of the rice mixture. 
- 
Cover and bake for 30 minutes. 
- 
Uncover, top with thin lemon slices, and bake for another 5 minutes until chicken is cooked and rice is tender.

Let rest for 5 minutes before serving.
