Description

Lemon Lush Dessert is a refreshing and indulgent treat featuring layers of creamy, tangy lemon pudding, smooth cream cheese, and a buttery graham cracker crust. Topped with whipped cream and lemon zest, this no-bake dessert is perfect for spring and summer gatherings. It’s easy to make, requires minimal ingredients, and will be a hit with everyone!

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs (about 10-12 graham crackers)

  • ⅓ cup granulated sugar

  • ⅓ cup unsalted butter, melted

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened

  • 1 cup powdered sugar

  • 1 ½ cups whipped topping (like Cool Whip)

Instructions

  • Prepare the Crust:

    • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined.

    • Press the crumb mixture into the bottom of a 9×13-inch baking dish to form an even crust. Chill in the refrigerator while you prepare the other layers.

  • Make the Cream Cheese Layer:

    • In a mixing bowl, beat softened cream cheese and powdered sugar until smooth and creamy.

    • Fold in the whipped topping and mix until fully combined. Spread this mixture evenly over the chilled crust.

  • Make the Lemon Layer:

    • In a large bowl, whisk together the lemon pudding mix and cold milk for about 2 minutes until it thickens. Let sit for a few minutes to firm up.

    • Spread the lemon pudding over the cream cheese layer.

  • Top and Chill:

    • Spread the remaining whipped topping over the lemon pudding layer for a light, fluffy finish.

    • Chill in the refrigerator for at least 4 hours, or until firm and set.

  • Garnish and Serve:

    • Before serving, garnish with lemon zest for a fresh, citrusy touch.

    • Slice into squares and serve!

Notes

Fruit Topping: Add fresh berries, like strawberries, blueberries, or raspberries, on top for added flavor and color.Lemon Curd: For a more intense lemon flavor, consider adding a layer of homemade lemon curd between the cream cheese and lemon pudding layers.Crust Variations: Swap the graham cracker crust for digestive biscuits or vanilla wafer crumbs for a different twist.
