Ingredients
-
½ cup unsalted butter, melted
-
1 cup granulated sugar
-
1 tablespoon lemon zest
-
¼ cup fresh lemon juice
-
1 cup milk
-
1 teaspoon vanilla extract
-
1 cup all-purpose flour
-
½ teaspoon baking powder
-
Pinch of salt
- Powdered sugar, for dusting (optional)
Instructions
-
Prepare the Cobbler:
Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or pie dish with butter or non-stick cooking spray. -
Mix Wet Ingredients:
In a medium bowl, combine the melted butter, sugar, lemon zest, lemon juice, milk, and vanilla extract. Whisk until smooth and well combined. -
Add Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined. -
Pour Into Baking Dish:
Pour the batter into the prepared baking dish. Do not stir or mix the batter—just pour and let it sit. -
Bake:
Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. As it bakes, the cobbler will separate into two layers: a cake-like top and a creamy lemon custard on the bottom. -
Serve:
Once done, remove from the oven and let cool for a few minutes. Optionally, dust with powdered sugar for a beautiful presentation. Serve warm with whipped cream or vanilla ice cream for extra indulgence.
