Description

Magic Lemon Cobbler is a simple yet irresistible dessert that combines a light, fluffy cake topping with a smooth, creamy lemon custard. As it bakes, the ingredients magically separate into two distinct layers—creating a tangy, sweet, and comforting treat. Easy to make and bursting with fresh lemon flavor, it’s the perfect dessert for any occasion!

Ingredients

  • ½ cup unsalted butter, melted

  • 1 cup granulated sugar

  • 1 tablespoon lemon zest

  • ¼ cup fresh lemon juice

  • 1 cup milk

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • ½ teaspoon baking powder

  • Pinch of salt

  • Powdered sugar, for dusting (optional)

Instructions

  • Prepare the Cobbler:
Preheat your oven to 350°F (175°C). Grease a 9-inch baking dish or pie dish with butter or non-stick cooking spray.

  • Mix Wet Ingredients:
In a medium bowl, combine the melted butter, sugar, lemon zest, lemon juice, milk, and vanilla extract. Whisk until smooth and well combined.

  • Add Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.

  • Pour Into Baking Dish:
Pour the batter into the prepared baking dish. Do not stir or mix the batter—just pour and let it sit.

  • Bake:
Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. As it bakes, the cobbler will separate into two layers: a cake-like top and a creamy lemon custard on the bottom.

  • Serve:
Once done, remove from the oven and let cool for a few minutes. Optionally, dust with powdered sugar for a beautiful presentation. Serve warm with whipped cream or vanilla ice cream for extra indulgence.
