Description

Ingredients

  • 2 ½ cups all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 1 ¾ cups granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1 cup maraschino cherries, drained and chopped

  • 2-3 tbsp maraschino cherry juice (optional)

  • 1 cup milk

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  • In a bowl, whisk together flour, baking powder, and salt.

  • In a large mixing bowl, cream butter and sugar until light and fluffy.

  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

  • Gradually add the flour mixture alternating with milk, beginning and ending with flour. Mix until just combined.

  • Fold in chopped maraschino cherries and cherry juice if using.

  • Pour batter into prepared pan and smooth the top.

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
