Description

Ingredients

  • 2 cups cooked white beans (cannellini, navy, or Great Northern)

  • 1/4 cup extra virgin olive oil

  • 2 tbsp red wine vinegar or lemon juice

  • 2 cloves garlic, minced

  • 1 tsp Dijon mustard

  • 1/2 tsp dried oregano or Italian seasoning

  • Salt and freshly ground black pepper, to taste

  • 1/4 cup chopped fresh parsley or basil

  • Optional: 1/4 cup finely diced red onion or shallots

  • Optional garnish: cherry tomatoes, sliced olives, crumbled feta cheese

Instructions

  1. Prepare Marinade:
    In a bowl, whisk together olive oil, red wine vinegar (or lemon juice), garlic, Dijon mustard, oregano, salt, and pepper until emulsified.

  2. Combine Beans and Marinade:
    Place cooked white beans in a serving bowl. Pour marinade over beans and toss gently to coat evenly.

  3. Add Fresh Herbs and Extras:
    Stir in chopped parsley or basil and diced onion if using.

  4. Marinate:
    Cover and refrigerate for at least 1 hour, preferably overnight, to let flavors meld.
