Mexican Shrimp Cocktail, or Cóctel de Camarón, is a refreshing appetizer featuring cooked shrimp marinated in a tangy tomato-based sauce with lime juice, fresh vegetables, and spicy peppers. Served chilled, this vibrant dish is perfect for parties, picnics, or light meals on warm days.
Ingredients

1 lb cooked shrimp, peeled and deveined

2 cups tomato juice or Clamato juice

¼ cup fresh lime juice

1 cup diced tomatoes

1 cup diced cucumber

½ cup diced red onion

¼ cup chopped cilantro

1 jalapeño or serrano pepper, finely chopped (adjust to taste)

1 avocado, diced (optional)

Hot sauce, to taste (optional)

Instructions

In a large bowl, combine tomato or Clamato juice, lime juice, salt, and pepper.

Add cooked shrimp, diced tomatoes, cucumber, red onion, cilantro, and chopped peppers. Stir gently to combine.

Chill for at least 1 hour to allow flavors to meld.

Just before serving, fold in diced avocado if using, and adjust seasoning with hot sauce or more lime juice.

Serve chilled in glasses or bowls, garnished with cilantro and lime wedges if desired.
