Ingredients
-
4 boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
Salt and pepper, to taste
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 cup heavy cream
-
½ cup chicken broth
-
¼ cup freshly chopped basil (plus more for garnish)
-
1 tablespoon lemon juice
-
½ cup grated parmesan cheese
-
1 ½ cups shredded mozzarella cheese
-
1 tablespoon butter
- 2 cloves garlic, minced
Instructions
-
Preheat the oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and onion powder.
-
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove and set aside.
-
In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
-
Add chicken broth and heavy cream to the skillet, stirring to combine. Bring to a simmer, scraping up any browned bits from the skillet.
-
Stir in chopped basil, lemon juice, and parmesan cheese. Simmer for 5-7 minutes until the sauce thickens slightly.
-
Return the chicken to the skillet, spoon some sauce over the top, and sprinkle with shredded mozzarella.
-
Transfer the skillet to the oven and bake for 8-10 minutes or until the mozzarella is melted and bubbly.
-
Garnish with additional basil and serve.
