Ingredients

  • 3 cups all-purpose flour (plus more for dusting)

  • 1 ½ teaspoons salt

  • ¼ teaspoon instant yeast

  • 1 ½ cups warm water (about 110°F)

  • 1 tablespoon olive oil (optional)

Instructions

  • Mix the dough: In a large bowl, whisk together the flour, salt, and yeast. Add the warm water and olive oil (if using), and stir until a shaggy dough forms.

  • Let it rest: Cover the bowl with plastic wrap or a damp kitchen towel. Let the dough rest at room temperature for 12-18 hours, or until it doubles in size and shows bubbles.

  • Preheat the oven: About 30 minutes before the dough is ready, place a Dutch oven (with the lid on) in the oven and preheat to 450°F (230°C).

  • Shape the dough: Turn the dough out onto a floured surface. Gently fold the dough over itself a few times to shape it into a rough ball.

  • Prepare to bake: Place a piece of parchment paper in the preheated Dutch oven and carefully transfer the dough onto it. Cover with the lid.

  • Bake the bread: Bake for 30 minutes with the lid on, then remove the lid and bake for an additional 10-15 minutes, or until golden brown and hollow when tapped.

  • Cool the bread: Let the bread cool on a wire rack before slicing.
