Description

One Pot Lemon Herb Chicken and Rice is a quick and flavorful meal that’s ready in just 30 minutes. Ingredients

  • For the Chicken:

    • 4 boneless skinless chicken breasts

    • 2 tablespoons butter

    • Salt and pepper to taste

    • 2 teaspoons Italian seasoning

  • For the Rice:

    • 1 cup uncooked white rice

    • 2 1/4 cups chicken broth (low-sodium recommended)

  • Juice of 1 lemon

Instructions

  1. Brown the Chicken:
    In a large skillet, melt butter over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Brown the chicken for 1-2 minutes on each side (it won’t be fully cooked). Transfer the chicken to a plate.

  2. Prepare the Rice:
    In the same skillet, add rice, chicken broth, lemon juice, and the remaining Italian seasoning. Stir to combine.

  3. Simmer:
    Place the chicken back on top of the rice mixture, cover the skillet, and cook over medium-low heat for 20-25 minutes, or until the chicken is cooked through and the rice is tender.

  4. Serve:
    Garnish with fresh herbs or extra lemon wedges, and serve hot.


Notes

Brown Rice: Use brown rice, but increase the cooking time to 30-35 minutes.Add Vegetables: Stir in frozen peas, carrots, or other vegetables for extra flavor and nutrients.Spicy Twist: Add red pepper flakes or a diced chili for a bit of heat.
