For the Chicken:

4 boneless skinless chicken breasts

For the Rice:

1 cup uncooked white rice

2 1/4 cups chicken broth (low-sodium recommended)

Brown the Chicken:
In a large skillet, melt butter over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Brown the chicken for 1-2 minutes on each side (it won’t be fully cooked). Transfer the chicken to a plate. -
Prepare the Rice:
In the same skillet, add rice, chicken broth, lemon juice, and the remaining Italian seasoning. Stir to combine. -
Simmer:
Place the chicken back on top of the rice mixture, cover the skillet, and cook over medium-low heat for 20-25 minutes, or until the chicken is cooked through and the rice is tender. -
Serve:
Garnish with fresh herbs or extra lemon wedges, and serve hot.
Notes
