Peanut Butter Cup Cookies are the perfect combination of rich homemade peanut butter cookies and a mini Reese’s Peanut Butter Cup center. These sweet and salty cookies are easy to make with just a few ingredients and no flour or butter. Perfect for any occasion, they’re a family favorite that will disappear quickly!
Ingredients

24 mini Reese’s Peanut Butter Cups 
- 
1 cup creamy peanut butter 
- 
1/2 cup granulated sugar 
- 
1/2 cup light brown sugar 
- 
1 tsp baking soda 
- 
2 large eggs 
- 
1 tsp pure vanilla extract 
- 1/4 tsp fine sea salt
Instructions
- 
Preheat Oven: 
 Preheat your oven to 350°F (175°C). Grease or line mini muffin tins with paper liners.

Mix Ingredients: 
 In a large bowl, combine peanut butter, granulated sugar, brown sugar, and baking soda. Stir in eggs, vanilla extract, and salt until fully incorporated.

Shape Cookies: 
 Use a medium cookie scoop to portion out the dough. Roll the dough into balls and place each one into a mini muffin tin.
- 
Bake: 
 Bake for 8–10 minutes. The cookies will be soft when you remove them from the oven. Immediately press one mini Reese’s Peanut Butter Cup into the center of each cookie.

Cool: 
 Allow the cookies to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
