5–6 cups powdered sugar (as needed to form stiff dough)

Instructions

Prepare Dough: In a bowl, combine cooled mashed potatoes with vanilla. Gradually add powdered sugar, mixing until a stiff, non-sticky dough forms.

Roll Out: Dust a clean surface with powdered sugar and roll dough into a rectangle about ¼-inch thick.

Spread Filling: Evenly spread peanut butter over the dough, leaving a border around the edges.

Roll & Chill: Roll tightly from the long side into a log. Wrap in plastic and chill for at least 1 hour.
