Ingredients

For the Crust:

  • 2 cups graham cracker crumbs

  • 1 package (8 oz) cream cheese, softened

  • 1 can (20 oz) crushed pineapple, well-drained

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 container (8 oz) whipped topping (Cool Whip), thawed

For the Topping (Optional):

  • Additional whipped topping

  • Toasted coconut flakes

  • Cherries or pineapple chunks for garnish

Instructions

  1. Prepare the Crust:

    • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.

    • Press the mixture evenly into the bottom of a 9×13-inch baking dish using a spoon or flat-bottomed glass.

    • Refrigerate the crust while preparing the filling.

  2. Make the Filling:

    • In a large bowl, beat softened cream cheese until smooth.

    • Mix in powdered sugar and vanilla extract, then fold in the drained crushed pineapple.

    • Gently fold in whipped topping until mixture is light and fluffy.

  3. Assemble the Bars:

    • Spread the pineapple filling evenly over the chilled crust.

    • Cover and refrigerate for at least 4 hours, or overnight, until set.

  4. Garnish and Serve:

    • Top with more whipped topping, toasted coconut, or fruit if desired.

    • Slice into bars and serve chilled.
