Description

Pineapple Cowboy Candy is a sweet and spicy condiment made with fresh pineapple, jalapeños, and a tangy syrup. Perfect for adding bold flavor to burgers, tacos, cream cheese spreads, or grilled meats, this vibrant and versatile relish is easy to make and ideal for gifting or meal prep.


Ingredients

  • 3 cups diced fresh pineapple

  • 1 cup thinly sliced jalapeños (adjust for desired heat)

  • 1 cup apple cider vinegar

  • 2 cups granulated sugar

  • 2 tablespoons lemon juice (or lime juice for variation)

  • 1 teaspoon mustard seeds (optional)

  • 1/2 teaspoon turmeric powder (optional)

  • 1 tablespoon freshly grated ginger (optional for extra depth)

Instructions

  • Prepare the Syrup:
    In a medium saucepan, combine the apple cider vinegar, sugar, and lemon juice. Bring to a boil over medium heat, stirring until the sugar fully dissolves.

  • Simmer the Syrup:
    Reduce heat and let the syrup simmer for 5 minutes to infuse the flavors.

  • Add Pineapple & Jalapeños:
    Stir in the diced pineapple and sliced jalapeños. Add mustard seeds, turmeric, and ginger if using. Simmer for 10–15 minutes, stirring occasionally, until jalapeños soften and pineapple is slightly translucent.

  • Cool Slightly:
    Remove from heat and allow to cool for 10 minutes.

  • Transfer to Jars:
    Carefully spoon the mixture into sterilized jars. Ensure pineapple and jalapeños are fully submerged in the syrup.

  • Refrigerate:
    Seal the jars and refrigerate for at least 24 hours to let the flavors meld. Serve chilled or at room temperature.
