Description

Ingredients

  • 1 bunch asparagus, trimmed

  • 4 large carrots, peeled and sliced into sticks

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp dried thyme or rosemary (optional)

  • Fresh lemon wedges, for serving (optional)

Instructions

  • Preheat Oven:
    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Prepare Vegetables:
    Place asparagus and carrots in a large mixing bowl. Drizzle with olive oil, add garlic, salt, pepper, and herbs (if using). Toss until evenly coated.

  • Roast the Vegetables:
    Spread vegetables in a single layer on the baking sheet. Roast for 20–25 minutes, flipping halfway, until carrots are tender and asparagus tips are slightly crisp.
