Easy to make and quick to prepare, this healthy, wholesome dish is perfect for any meal—whether it’s a weeknight dinner, holiday feast, or barbecue. The combination of textures and flavors will elevate your meal and have everyone coming back for more!

Ingredients

  • 1 lb (450g) baby potatoes (a mix of red, yellow, and purple potatoes works great)

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme (or rosemary)

  • 1/2 teaspoon paprika (smoked paprika for extra flavor)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • 1 tablespoon grated Parmesan cheese (optional, for extra flavor)

Instructions

  • Prepare the Potatoes:

    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

    • Wash the potatoes thoroughly and cut the larger ones into bite-sized chunks. Keep smaller baby potatoes whole or halve them.

  • Season the Potatoes:

    • Toss the potatoes with olive oil, garlic powder, onion powder, thyme, paprika, salt, and pepper in a large bowl, ensuring they’re evenly coated.

  • Roast the Potatoes:

    • Spread the seasoned potatoes in a single layer on the prepared baking sheet. Avoid overcrowding for crispy results.

    • Roast in the preheated oven for 25-30 minutes, flipping halfway, until golden brown and fork-tender.

  • Finish and Serve:

    • Remove from the oven, garnish with fresh parsley and grated Parmesan cheese (optional), and serve hot.
