Ingredients
Salad:

4 cups chopped romaine lettuce

1 cup cherry tomatoes, halved
- 1 avocado, diced

1/2 cup crumbled blue cheese or feta

1/4 cup red onion, finely chopped

1/4 cup chopped fresh parsley or cilantro
Dressing:

1/4 cup red wine vinegar

1/2 cup olive oil
-
1 tbsp Dijon mustard

1 tsp honey
-
1 clove garlic, minced

Salt and freshly ground black pepper, to taste
Instructions
Make the Dressing:
In a small bowl or jar, whisk together red wine vinegar, olive oil, Dijon mustard, honey, garlic, salt, and pepper until emulsified.
Assemble the Salad:
In a large bowl, combine chopped romaine, cherry tomatoes, avocado, cheese, red onion, and parsley.cheese, red onion
Toss and Serve:
Drizzle with dressing and gently toss to coat evenly. Serve immediately.
