Ingredients

For the Brownie Layer:

  • 1/2 cup unsalted butter

  • 1 cup granulated sugar

  • 2 large eggs

  • Green food coloring (optional)

For the Chocolate Ganache:

  • 4 oz semi-sweet chocolate, chopped

  • 1/2 cup heavy cream

Instructions

  • Prepare the Brownies:
    Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan. Melt butter and mix with sugar, eggs, and vanilla. Stir in cocoa powder, flour, salt, and baking powder until just combined. Pour batter into pan and bake for 20-25 minutes. Let cool completely.

  • Make the Mint Layer:
    Beat powdered sugar and softened butter until smooth. Add peppermint extract and enough milk to reach a spreadable consistency. Add green food coloring if desired. Spread mint layer evenly over cooled brownies.

  • Prepare Ganache:
    Heat heavy cream until simmering, then pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth. Pour ganache over mint layer and spread evenly.

  • Chill and Serve:
    Refrigerate brownies for at least 1 hour before cutting. Cut into squares and serve.
