Vanilla Crazy Cake is a moist, fluffy, and egg-free cake made without milk or butter. Known as “wacky cake,” it’s made using a simple pantry staple method where ingredients are mixed directly in the baking pan. Perfect for vegan, allergy-friendly, and budget-conscious baking with classic vanilla flavor.
Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

1 tsp baking soda

½ tsp salt

1 tsp vanilla extract

1 tbsp white vinegar or apple cider vinegar

5 tbsp vegetable oil

Instructions

Preheat oven to 350°F (175°C). Lightly grease or spray an 8×8-inch baking pan.

In the prepared pan, sift together flour, sugar, baking soda, and salt.

Make three wells in the dry ingredients. Pour vanilla extract into one, vinegar into another, and vegetable oil into the third.

Pour water over all the ingredients.

Using a whisk or fork, mix everything together directly in the pan until smooth and well combined.

Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
