Description

Watermelon Rice Krispie Treats are a fun, colorful twist on the classic dessert. With vibrant red and green layers and a refreshing watermelon flavor, these treats are perfect for summer parties, BBQs, or as a creative snack. Easy to make and delightfully sweet, they’re a hit with kids and adults alike!

Ingredients

For the Rice Krispie treats:

  • 6 cups Rice Krispies cereal

  • 4 cups mini marshmallows

  • 3 tablespoons unsalted butter

For the watermelon flavor layers:

  • 1/2 teaspoon watermelon extract (or 1 tablespoon watermelon Jello powder)

  • Red food coloring (optional, for the red layer)

  • Green food coloring (optional, for the green layer)

Instructions

  • Prepare the Rice Krispie treats base:

    • In a large saucepan, melt butter over low heat. Once melted, add marshmallows and stir until fully melted and smooth.

    • Stir in Rice Krispies cereal until well-coated with the marshmallow mixture.

    • Divide the mixture into two bowls, one for the red layer and one for the green layer.

  • Add color and flavor:

    • For the red layer, add a few drops of red food coloring and watermelon extract (or Jello powder). Stir until the color is even.

    • For the green layer, add green food coloring and mix to combine.

  • Assemble the Watermelon Rice Krispie Treats:

    • Grease a 9×9-inch baking dish or line it with parchment paper.

    • Press the red Rice Krispies mixture into the dish, then top with the green layer. Press it down gently.

  • Chill and serve:

    • Let the treats cool for 30 minutes to 1 hour at room temperature.

  • Cut into squares or wedges (for a watermelon slice look) and serve.

Notes

You can add chocolate chips to the green layer for a “watermelon seed” effect.Feel free to experiment with other fruit flavors like strawberry or raspberry. For a gluten-free option, make sure to use certified gluten-free Rice Krispies.
