Ingredients

1 whole head of cauliflower, leaves trimmed and stem cut flat

3 tbsp olive oil

2 cloves garlic, minced

1 tsp paprika

1/2 tsp ground cumin

1/2 tsp turmeric (optional, for color)

Salt and freshly ground black pepper, to taste

2 tbsp lemon juice

Instructions

Preheat Oven:
Preheat oven to 400°F (200°C). Line a baking sheet or dish with foil or parchment. -
Prep Cauliflower:
Rinse and dry cauliflower thoroughly. Trim outer leaves and stem to sit flat. -
Make Seasoning Paste:
Mix olive oil, garlic, paprika, cumin, turmeric, salt, pepper, and lemon juice in a bowl. -
Season:
Brush or rub mixture all over cauliflower, including the underside. -
Roast Covered:
Place cauliflower in baking dish. Cover with foil and roast for 30 minutes. -
Roast Uncovered:
Uncover and roast another 30–40 minutes until golden and fork-tender. -
Serve:
Let rest 5 minutes. Garnish with herbs and extra lemon or oil if desired.
